Antioxidant Activity, Total Phenolic and Flavonoid Contents in Floral Saffron Bio-Residues

Saffron spices are composed of dehydrated stigmas Crocus sativus L. A large amount bio-residues (stamens, tepals, and stigmas) is generated during the production this spice (~92 g per 100 flowers). These usually discarded losing chance to obtain interesting bioactive compounds from them. In work, we use saffron as possible source natural compounds. Different extraction conditions were applied obtaining hydrophilic lipophilic components. The antioxidant activity in different analysed using ABTS method developed by our team. Furthermore, total content phenolic flavonoids present estimated. We demonstrated that contain a high both flavonoid with strong potential effect. Moreover, compared activities (obtained stamens, stigmas). was made at two pH (4.5 7.5) measured (antioxidant activity, phenol content) 7.5.
